Vinification: Manual harvest in boxes. Destemmed in the winery and the uncrushed grapes are transferred to 225-litre open French oak barrels for fermentation, which is carried out without adding sulphites or yeasts. Maceration for 16 days.
Ageing: 12 months of ageing in French oak barrels. It has not been filtered so precipitates may appear.
